Sushi Kanesaka

Discreetly nestled above Park Lane, Sushi Kanesaka is one of London’s most intimate and exquisite Japanese dining experiences, an omakase sanctuary for those who understand that true luxury is never loud. Created by legendary Chef Shinji Kanesaka, whose Tokyo flagship earned two Michelin stars, this London outpost brings the revered traditions of Edomae sushi to the heart of Mayfair.

Here, the omakase is not a menu – it’s a dialogue. A culinary trust exchange, where every course is crafted by the chef in real time, based on seasonality, instinct, and the subtle conversation between guest and artist. The rice is seasoned with red vinegar and sea salt to highlight the grain’s delicate sweetness. The fish – sourced both from Japan’s 72 micro-seasons and Europe’s most pristine rivers and coasts, is treated with care and ritual, using the Ikejime method to preserve purity, texture, and flavor.

Every detail of the setting is meticulously considered: a hand-carved Hinoki cypress wood counter, known for its soft scent and warmth; Hans J. Wegner chairs, selected for balance and comfort; and handcrafted kumiko wood panels, echoing Japanese tradition with subtle modernity. Ceramic works by Shiro Tsujimura and kiriko-cut crystal glasses enhance the sense of ceremony, allowing the food to remain the quiet hero.
